WOW--that menu sounds so yummy!
Yes, I brine my turkey every year in allspice, peppercorns, bay leaves, and of course, salt water. It makes the best turkey ever! One year I totally overcooked it (by like an hour) and it was still juicy!
So the recipe is on epicurious.com, It's called Apple Cider Roasted Turkey. I don't make the apple cider gravy, though, as my family prefers savory gravy.
I am also making cornbread sausage and sage stuffing (you can't stuff a brined turkey, though), and orange-essence cranberry sauce, and garlic mashed potatoes (gotta use real cream in those babies). My friend is making the rest!
