RED LEAF SALAD WITH ORANGES

2 oranges
1 head of red leaf lettuce, coarsely chopped
1/2 medium red onion, thinly sliced (about 1 1/4 cups)
1 1/2 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar

Using small sharp knife, cut off peel and white pith from oranges. Cut oranges crosswise into round slices, then cut slices in half. Toss red leaf lettuce, orange slices, and red onion slices in large bowl. Add oil and vinegar and toss to coat; season salad to taste with salt and pepper.

I made this for lunch today and it was sooo yummy. Very refreshing and light.. perfect for the 3 month diet I am on in preperation for our cruise ;) Pretty too- would be great for Thanksgiving, maybe add some cranberries..
